Pizza Pockets with Marinara

Homemade pizza pockets stuffed with Kiri cheese, meat and spicy arugula are a definite crowd pleaser. Serve with marinara dipping sauce and watch them disappear!

Serves 4

Ingredients

  • 8 Kiri squares brought to room temperature
  • 1 tablespoon olive oil
  • 225 grams turkey or beef sausage
  • 30 grams chopped arugula
  • 60 grams grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (385 gram) package of ready-made pizza dough
  • Plain flour, for rolling out pizza dough
  • 1 egg, beaten
  • 1 (350 milliliter) jar marinara sauce, or homemade tomato sauce 

Directions

STEP 1
Heat the olive oil. Skin and empty the sausages and fry the meat in the oil until crumbled and golden.
 
STEP 2
Add the arugula and cook until wilted. Turn off the heat and allow to cool.
 
STEP 3
Add Kiri squares and 35 grams of parmesan cheese; season with salt and pepper and stir to combine.
 
STEP 4
Preheat the oven to 200°C. Roll out the pizza dough on a lightly floured surface.
 
STEP 5
Cut the rectangle into 8 equal rectangular parts. Spoon the sausage mix onto each of the rectangles. Brush the edges of the rectangle with beaten egg. Close the rectangles over the topping.
 
STEP 6
Brush the top of each pizza pocket with beaten egg and place them in the oven tray. Bake for 15 minutes.
Garnish
Pizza pockets are even more delicious served with hot marinara dip.
