Oriental Rice with Seasoned Lamb

Perfect as a side, this flavorful Oriental rice dish features minced meat, spices, nuts and a creamy Kiri stock for a palette-pleaser the whole family will love. Serve with a side salad or curry to make it a meal.

Serves 4

Ingredients

  • 6 Kiri squares
  • 500 grams minced meat (lamb)
  • 3 medium onions, finely chopped
  • 4 cups of white long grain rice, washed and drained
  • 5 cups of chicken stock
  • 1/4 cup raisins
  • 2 teaspoon cinnamon
  • 1 teaspoon Arabic 7-spice mixture
  • 1/2 teaspoon ground black pepper
  • 5 whole cardamom seeds
  • Bay leaf
  • 3 tablespoons vegetable oil
  • 1 cup mixed toasted pine seeds, almonds and pistachios

Directions

STEP 1
Sauté the onions in oil until golden brown, then add lamb meat.
 
STEP 2
Add the raisins, cinnamon, spices, pepper, cardamom and bay leaf and cook the mixture.
 
STEP 3
Stir in the rice and mix to combine with meat.
 
STEP 4
Add the Kiri squares to the stock and stir until cheese melts.
 
STEP 5
Pour the Kiri mixture over rice.
 
STEP 6
When the rice starts to boil, cover the cooking pan and simmer over low heat until the rice is well cooked.
Garnish

Garnish the rice with toasted nuts, raisins and dried wild blueberries for a sweet, flavorful finish.
