Peanut Butter Chocolate Cheesecake
with Kiri ®

A velvety, decadent dessert made with Kiri squares, dark chocolate, peanut butter and whipped cream. Top with fresh berries for stunning presentation.

Serves 8

Ingredients

  • 15 Kiri squares
  • 1 cup crumbled digestive biscuits
  • 3 tablespoons unsalted butter (melted)
  • 2 sheets gelatin
  • 1 cup milk
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 1 cup unsweetened dark chocolate (melted)
  • 1 ½ cups peanut butter
  • 1 cup whipped cream

Directions

STEP 1
Mix the biscuit crumble with the melted butter until it’s evenly moist.

STEP 2
Spread the crumble in the pan and bake for 7 minutes. Leave it to cool for 10 minutes.

STEP 3
Soak the gelatin for 10 minutes, then drain. Melt the gelatin in the milk on low heat.
 
STEP 4
Beat the Kiri cheese in a mixer with the sugar and vanilla until it becomes spreadable, than pour in the gelatin slowly.
 
STEP 5
Divide the mixture into two equal portions. Add the melted chocolate gradually to one of them, then the whipped cream. Combine the peanut butter with the remaining mixture.
 
STEP 6
Spread the chocolate mixture evenly over the top of the cooled biscuits using a spatula. Let it cool in the fridge for 30 minutes, and then pour the peanut butter mixture over the chocolate layer. You’re done! Chill the cake for 6 hours before serving.
 
Garnish

 Decorate with red berries and cream.
