Baked Zucchini in Yogurt-Mint Sauce

It may sound complex, but this French-inspired salad is beautifully simple. Chopped ripe tomatoes and fresh basil are married with olive oil and topped with creamy squares of Kiri cheese.

Roughly chop the tomato and place in a big bowl.

Add the basil and olive oil.

Season well with salt and pepper. Marinate for a few minutes. |
