Almond & Cream Brioche
with Puck ®

Rich, light and tender French pastries sweetened with sugar and creamy Puck Whipping Cream. Ground almonds give the brioche a subtle nutty flavor.

Serves 2

Ingredients

  • 200 grams ground almonds
  • 200 grams flour
  • 4 egg yolks
  • 50 grams sugar
  • 1 egg for brushing the brioche
  • 150 grams yeast
  • 50 milliliter Puck Whipping Cream
  • ¼ teaspoon salt
  • ¼ cup Puck Whipping Cream for garnishing

Directions

STEP 1
Put all the ingredients in the food processor and mix well to get smooth dough.
 
STEP 2
Cover the dough and let it rest for half an hour.

STEP 3
Knead the dough one more time, and then shape it as you wish, or put it in a baking dish especially designed for brioche.

STEP 4
Brush the top of the brioche with the beaten egg, and leave it until it doubles in size.

STEP 5
Bake the brioche in the oven at 200 degrees Celsius for around 20 minutes.
Garnish

 Leave it to cool and garnish it with Puck Whipping Cream.
